SALT and Brooki Bakehouse combine Bueno cookies and soft serve for a limited-edition dessert launching throughout the UAE and Saudi Arabia.

The Brooki Cooki Softi has arrived in Dubai, bringing one of Brooki Bakehouse’s best-known cookie flavours into SALT’s signature soft-serve format.

The limited-edition collaboration began at SALT Dubai Mall before expanding to additional locations in Dubai, Abu Dhabi, Ras Al Khaimah, Sharjah and Al Ain. Saudi Arabia is also included in the regional rollout.

The dessert combines Brooki’s Bueno cookie with a choice of milk or chocolate soft serve, finished with a touch of salt. It gives customers a different way to try the rich chocolate and hazelnut flavour that helped turn the Australian bakery into an international name.

According to the published Brooki Cooki Softi rollout schedule, the collaboration is reaching participating SALT branches in stages throughout September.

What Is the Brooki Cooki Softi?

The Brooki Cooki Softi brings two recognisable products together in one dessert: Brooki Bakehouse’s chunky Bueno cookie and SALT’s creamy soft serve.

Customers can choose between milk and chocolate soft serve. The dessert is then paired with pieces of the Bueno cookie and completed with SALT’s signature salty touch, balancing the sweetness of the chocolate and hazelnut flavours.

Brooki describes its original Bueno cookie as a thick, soft-centred cookie built around chocolate and hazelnut. The flavour is one of the products featured by Brooki Bakehouse UAE, alongside the brand’s chocolate chip, carrot cake, cinnamon roll and New York-style cookies.

The result is designed to deliver contrasting textures in the same serving. The soft serve provides the cold, creamy base, while the cookie adds a thicker, chewier element.

It is also a natural collaboration between two brands known for visually distinctive comfort food. SALT has built a strong presence through its burgers, fries and soft-serve desserts, while Brooki is known for oversized cookies with rich fillings and soft centres.

The Launch Started at Dubai Mall

The collaboration made its first appearance at SALT Dubai Mall on September 4, 2026. A second launch followed at SALT Umm Al Emarat Park in Abu Dhabi on September 5.

From there, the Brooki Cooki Softi began a wider rollout covering SALT locations around the UAE. The staged approach means availability dates vary depending on the emirate and branch.

The rollout reaches several different types of SALT locations, from beach destinations and shopping malls to community branches. In Dubai, participating locations include Kite Beach, Dubai Festival City, Marina Mall, Motor City, Nad Al Sheba and Al Khawaneej.

The schedule also takes the collaboration beyond the country’s two largest cities, with dates confirmed for Ras Al Khaimah, Sharjah and Al Ain.

Brooki’s UAE Following Has Been Growing

Brooki Bakehouse began in Brisbane in 2022 and developed a following around its thick cookies, brownies and behind-the-scenes bakery content.

Its expansion into the UAE followed a series of successful appearances in the country. At an Abu Dhabi festival pop-up, the bakery reportedly sold more than 5,000 cookies over two days, significantly exceeding its initial expectations.

The response demonstrated that the brand already had an audience in the region before establishing permanent UAE operations. Brooki has since opened locations in Abu Dhabi and Sharjah, while its official UAE website says a Dubai flagship is planned for late 2026.

That growing local presence gives the SALT partnership more weight than a one-day promotional appearance. The Brooki Cooki Softi is launching through an established network of SALT branches, allowing customers in several emirates to try the collaboration without travelling to one central location.

Dubai has already shown a strong appetite for cookie-led concepts, including the opening of a cookie dough dessert destination in Dubai Hills. The Brooki and SALT collaboration enters that market with two brands that already have recognisable products and loyal audiences.
